Here's the recipe from an old Cottage Living:
1 1/4 butter, softened
1 c. brown sugar
1/2 c. sugar
1 egg
2 tsp. vanilla
1 1/2 c. AP flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
3 c. uncooked oats
Beat butter and sugars at medium speed until creamy. Add egg and vanilla: beat well. Combine flour and next 3 ingredients in a bowl; stirring well. Add oats and stir again. Add to butter mixture and blend. Roll into a good sized ball and place on cookie sheet. Bake @ 375 degrees for 10 minutes and then cool on pan for 2-3 minutes. Cool on wire racks.
Cream filling:
1/2 c. butter, softened
2 c. powdered sugar
1-2 tbsp. whipping cream
1 tsp. vanilla
Combine all ingredients in a medium bowl. Beat on low until combined, scrape sides, and then beat on high until light and fluffy. Spread and sandwich cookies.
